My research and interest areas include food preparation skills/health education in school; sports nutrition; healthy food and wellness; winter activities for fun and fitness; legislative issues related to school food environment; promoting local sustainable and organic agriculture.

Thank you for visiting my web page at the University of New Haven. I truly enjoy the field of nutrition and dietetics and am pleased to offer ongoing advising, mentoring, career counseling for enrolled students and alumni. Our program attracts a wonderful variety of classmates and offers a convenient location, flexible course schedules, small classes and individualized advising in the ideal location of New Haven, Connecticut- home of world renowned nutrition professionals, health and wellness facilities. New Haven is a marvelous college town within a few hours by train or car to New York City, Boston, Cape Cod beaches and northern New England.

My courses are focused upon principles of food science, healthy food preparation, dietetics management and innovative and practical techniques for achieving lifestyle change. Our program offers a newly funded Nutrition Resource Center, commercial food laboratory and presentation area and an adjacent state of the art computer laboratory and Smart Technology Classrooms. My greatest wish is for students to value healthy food, practice lifestyle changes that promote wellness and share their nutrition expertise with the local and global community. My shared work and life experience helps students envision a career path that complements their talents and interests. For the past three years, our program has successfully matched or placed 100% of our graduating students into supervised practice programs, graduate study or full-time nutrition-related employment.
